A hoy-hoy and welcome back!! This is going to be a mash up (Monster Mash Up, that is) of summer and Halloween!!
There is something a little unsettling about wandering through a summer garden after dark. The sun has disappeared behind the trees, the air is warm and heavy, and the garden has taken on a life of its own. Leaves rustle when there is no breeze. Shadows seem to move just beyond the edge of the path. Somewhere in the distance, a cricket chirps—and then suddenly stops.
But tonight, we aren’t looking for ghosts. We are looking for rhubarb.
Deep in the garden, hiding beneath enormous green leaves, are the ruby-red stalks we need. They almost seem to glow in the moonlight, their brilliant red color peeking out from the darkness like a little bit of Halloween magic. You reach down and pull one from the earth, then another, gathering your treasure before the garden decides it has had enough visitors. Once you’ve escaped the garden with your bounty, the real transformation begins.
Those tart, ruby-red stalks are about to become something entirely different: sweet, creamy, and completely irresistible. Folded into a luscious filling and tucked into a tender pie crust, the rhubarb loses its sharp edge and becomes the star of a beautiful Rhubarb Cream Pie. It may have started its life lurking in a mysterious summer garden, but with a little sugar, cream, and a bit of kitchen magic, this creepy garden treasure becomes one delicious Halloween-season treat.
So grab your pie crust, light a candle, and come with me into the garden. Just be careful what you pick.
That’s right, we are making a rhubarb cream pie!! It is the perfect combination of sweet and tart! I found this recipe from Erin Jeanne McDowell and it is perfect, please check out her website for more information and a video!! Let’s get going!! Wait!! I also need to thank you my wonderful friend, Melissa for the rhubarb!

454 grams sliced rhubarb
30 grams fresh lemon juice
150 grams of sugar
4 grams vanilla bean paste
Pinch of sea salt
Vanilla Cream Filling
285 grams mascarpone cheese
99 grams sugar
353 grams heavy cream
4 grams vanilla bean paste
Pinch of sea salt
Putting it Altogether!
- Blind Bake your crust – we are not baking this again, make sure it is done
2. In a medium pot, summon the rhubarb, lemon juice, sugar, vanilla bean paste (or those tiny vanilla seeds), and salt. Stir everything together and set it over medium heat. Let the mixture simmer away for 10–15 minutes, stirring occasionally, until the ruby-red rhubarb softens and releases its juices, transforming into a thick, saucy mixture. Keep an eye on your bubbling cauldron—you want tender rhubarb swimming in a sweet, fragrant sauce, not a pot of mush!
3. Now it’s time to work a little kitchen magic. Carefully transfer the warm rhubarb mixture to a blender and puree until it is smooth and well combined. Don’t worry if a few mysterious little chunks remain—especially if you’re doing this by hand. The goal is simply to break down some of those fibrous rhubarb stalks and turn our ruby-red garden treasure into a smoother jam. How smooth you make it is entirely up to you. I prefer mine fairly smooth because the custard that comes later is silky and creamy, and I love the contrast of a velvety filling.Just be careful with that bubbling cauldron of rhubarb magic—it’s hot!
4. Return your ghoulish-green potion to the pot and place it over low heat. Now comes the part where patience—and a little stirring magic—is required. Stir frequently as the mixture slowly thickens, letting it simmer gently for about 15 more minutes. You’ll know it’s ready when you lift your spoon and the rhubarb mixture falls from the side in a thick, continuous sheet rather than running off like a thin sauce. Our garden potion is transforming beautifully! Once it reaches that thick, jammy consistency, it’s ready for the next bit of pie magic.

5. Cool this over night in the fridge with plastic wrap over the top to stop the formation of a skin. IF you want before refrigeration, add red food die to turn the green jam into blood or ruby red color!
6. Now for the creamy part of our little Halloween spell! In the bowl of an electric mixer (or a large bowl with a hand mixer), add the mascarpone and beat it on low speed until smooth and combined. Slowly pour in the cream, followed by the sugar, letting each addition blend into the mixture before adding the next. Gradually increase the mixer speed to medium-high and whip until soft peaks begin to form. Add the vanilla bean paste (or those tiny vanilla seeds) and a pinch of salt, then continue mixing on medium speed until everything is beautifully combined and thickened. And just like that, our mysterious little garden potion has become something much more enchanting: a cloud of sweet, silky mascarpone cream, ready to meet its ruby-red rhubarb companion.
7. Now it’s time to assemble our little Halloween masterpiece! Spoon about one-third of the mascarpone filling into your prepared and cooled pie crust, spreading it into a thick, even layer. Dollop about one-third of the ruby-red rhubarb jam over the cream and gently spread it into a thin, even layer. Now repeat the spell: another layer of mascarpone, followed by another layer of rhubarb jam. Continue alternating the two fillings until your pie is beautifully layered, finishing with a generous layer of that gorgeous ruby-red rhubarb jam across the entire surface. A little tip from the kitchen cauldron: always dollop the mascarpone cream over the jam rather than trying to spread the cream directly across it. It makes the layers much easier to create without disturbing the jam underneath. If the jam starts getting a little mischievous and refuses to cooperate, pop the pie into the freezer for about 5 minutes to help firm it up before adding the next layer. Once that final layer of rhubarb jam is spread across the top, step back and admire your creation. What started as mysterious ruby-red stalks hiding in a summer garden has officially been transformed into a hauntingly beautiful pie.
8. Now comes the hardest part of the entire spell: waiting! Carefully place your pie in the refrigerator and let it chill for at least 2 hours. This gives all those creamy, ruby-red layers time to firm up and set into the delicious masterpiece you’ve been conjuring. Keep the pie refrigerated until you’re ready to serve. And if, by some strange Halloween magic, you happen to have leftovers, cover them well and keep them refrigerated for up to 3 days. When you’re finally ready to serve, bring out your beautiful creation, slice into those hauntingly gorgeous layers, and enjoy the fruits of your garden magic.

In Conclusion
And just like that, our little garden adventure has come to an end.
What began as a mysterious walk through a shadowy summer garden in search of those ruby-red stalks has been transformed into something wonderfully delicious. The tart rhubarb, sweet jam, and silky mascarpone cream come together in the most delightful way, all tucked inside a buttery pie crust. There’s something a little magical about taking an ingredient from the garden and turning it into something that brings people around the table. Perhaps that’s the best kind of kitchen magic—the kind you can eat.
So, this October, skip the tricks and make yourself a treat. Light a few candles, embrace the spooky season, and serve up a slice of this hauntingly beautiful Rhubarb Cream Pie. Just remember: if you hear something rustling in the garden after dark…
You might want to leave the rhubarb picking until morning.
