A hoy-hoy and welcome back!! Some recipes fill our stomachs, while others fill our hearts. Great Aunt Vi’s smothered pork chops and rice has always done both. Growing up, this was one of those meals everyone looked forward to. The rich aroma of pork chops slowly simmering in a savory gravy would drift through the house, letting everyone know that something special was waiting for us at the dinner table. It wasn’t fancy or complicated, but it didn’t need to be. It was made with love, and somehow that made it taste even better.
As the weather begins to cool each fall and winter, I find myself returning to this recipe again and again. There is something incredibly comforting about tender pork chops nestled in a creamy, flavorful gravy, spooned generously over warm rice. It’s the kind of meal that warms you from the inside out after a long day, wrapping you in the same comfort as a favorite blanket.
What I love most about making Aunt Vi’s recipe is that every bite carries a memory. I can still picture family dinners filled with laughter, conversations around the table, and the simple joy of being together. Food has an incredible way of preserving moments that photographs sometimes cannot. One taste can transport you back decades, reminding you of the people who taught you, fed you, and loved you.
Now, I have the privilege of making this same meal for my own family. As I brown the pork chops and stir the gravy, I often think of Aunt Vi and how recipes like this become part of a family’s legacy. They’re passed from one generation to the next, carrying stories, traditions, and love right alongside the ingredients.
This recipe has become one of our family’s comfort meals. Whether it’s a chilly autumn evening or a snowy winter night, it never fails to bring everyone to the table. It’s hearty, cozy, and exactly the kind of meal that reminds us that home isn’t just a place—it’s the people we share it with.

I hope that as you make this recipe in your own kitchen, it becomes more than just dinner. I hope it creates new memories, sparks conversations around your table, and perhaps becomes a tradition in your family, just as it has been in mine.
Thank you, Aunt Vi, for leaving us something so much bigger than a recipe. You left us a way to remember you, one comforting plate at a time.

Those sound so comforting and delicious!
On a chilly Fall day or cold Winter’s night, this dish is perfect!!
Our departed loved ones are never gone. There are always reminders especially in the meals we make. I have one single meal that reminds me of my grandma but it’s so important to me. I like to think that she’s proud every time I make that pan of sausage gravy for breakfast!
I’m always looking for recipes to help me *want* to eat pork chops. I’m going to have to give this one a try!
