Anyhoo, today we will be talking about a tropical brownies recipe that I am very excited to share with you! For Mother’s Day this year, I wanted to make my mom something a little different. I usually try to bake her a homemade dessert, and since we both love Mounds bars, I thought coconut brownies would be the perfect choice. These brownies have everything we love about that classic chocolate-and-coconut combination — rich fudgy chocolate, sweet coconut filling, and the perfect chewy texture. They’re comforting, indulgent, and feel a little extra special for a holiday like Mother’s Day.
I’ve always loved how certain desserts can bring back memories. Mounds bars were always one of those treats we both enjoyed, so turning those flavors into homemade brownies felt personal and meaningful. The smell of chocolate baking in the kitchen alone made the whole house feel cozy. What I love most about this recipe is that it looks impressive without being complicated. It’s the kind of dessert that feels homemade in the best way — slightly messy, extra fudgy, and made with love.
If you love chocolate and coconut together, these brownies are definitely worth trying. They’re perfect for holidays, family gatherings, or anytime you want a dessert that feels nostalgic and comforting.
And for mom, they made the perfect Mother’s Day treat. So, let’s get started!!
Ingredients
Coconut Pudding Layer
270 ml of Canned Coconut Milk, room temp
125 grams of sugar
24 grams of Cornstarch
2 tsp of Vanilla or Vanilla Bean Paste
60 grams of Butter at room temp, cut into pieces
150 grams of unsweetened coconut
60 ml coconut Canned Coconut Milk, room temperature
Whipped Cream Topping
180 ml Whipping Cream, cold
1 tsp vanilla extract
40 grams of powder sugar
30 grams of unsweetened coconut
Instructions
The Brownie
We have had this discussion before, but, I am going to say it again! Before anyone judges me for using a boxed brownie mix here, hear me out.
Some recipes are worth making completely from scratch. Brownies? Honestly, the boxed mix people have this figured out already. They’re fudgy, reliable, chocolatey, and somehow always taste like childhood in the best way. And once you add the coconut layer inspired by our favorite Mounds bars, nobody is going to stop mid-bite and ask if the brownies came from a box. They’re too busy grabbing a second one.
Using a boxed mix also makes this recipe so much easier, which is perfect when you’re baking for a holiday and don’t want your kitchen covered in cocoa powder for three hours. So yes, this is my official statement in defense of boxed brownie mix: work smarter, not harder — especially when the brownies turn out this good. Also, we will be adding two more layers that we will be making ourselves, one of them including a homemade coconut pudding layer!!
Coconut Pudding Layer
Step One – In a saucepan, combine 270ml of coconut milk, the sugar and cornstarch. Place over medium to medium low heat and with a whisk, stir until thick and bubbly. Remember, the mixture has to bubble in the middle – that means that the cornstarch’s thicken properties have been unlocked.
Step Two – Remove this from the heat and while stirring, slowly add the butter and then the vanilla. Place in a clean bowl and add the coconut; stir together. Place plastic wrap over the top of the pudding, making contact with the pudding to stop a film from forming.
Step Three – Place in refrigerator. Cool off. Once cooled, take out and stir to loosen a little. Then add the remaining 60 ml of the coconut milk and stir together to incorporate. Spread this on top of the cooled brownies. Set aside.






Whipped Cream
Step One – whip the cold whipping cream until peaks form. Add the sugar and vanilla and combine. Spread over the top, then sprinkle this the remaining coconut flakes. Enjoy!!


Conclusion
These coconut brownies may not come with ocean views or palm trees, but they definitely bring a little tropical vacation energy to the dessert table.
Between the rich chocolate, sweet coconut filling, and the inspiration from our favorite Mounds bars, this recipe ended up being the perfect Mother’s Day treat for my mom. They’re indulgent, a little nostalgic, and dangerously easy to keep sneaking from the pan every time you walk through the kitchen. And honestly, if a boxed brownie mix, coconut, and chocolate can make people this happy, I think that counts as paradise.
